0.156), 16px);\">El sodio es un nutrimento indispensable en la dieta. Como parte de sus funciones, el sodio se comporta como cati\u00f3n extracelular , aportando cargas positivas al plasma y el l\u00edquido intersticial, por lo que participa en la regulaci\u00f3n de la presi\u00f3n osm\u00f3tica.<\/p>\n<\/div><\/div>\n<\/div><\/div><\/div>\n<\/div><\/section>\n\n\n\n<p class=\"wp-block-paragraph\">La presi\u00f3n osm\u00f3tica es la fuerza que ejercen los electr\u00f3litos, para mantener al agua en un determinado compartimiento corporal; en este caso, el plasma. De este modo, el sodio participa en la regulaci\u00f3n de la presi\u00f3n arterial. Su concentraci\u00f3n intracelular es muy baja, mientras que en el interior de las c\u00e9lulas predomina el potasio.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">El t\u00e9rmino sodio, proviene del lat\u00edn natrium , por lo que su s\u00edmbolo qu\u00edmico en la tabla peri\u00f3dica es Na.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">El sodio tambi\u00e9n participa en la contracci\u00f3n muscular y en el intercambio de nutrimentos a trav\u00e9s de algunos sistemas transportadores que funcionan como bombas de sodio.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Las fuentes alimentarias de sodio incluyen:<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>a) a la <a href=\"http:\/\/marhuez.com\/es\/content\/sal-por-que-es-importante-consumirla\" target=\"_blank\" rel=\"noreferrer noopener\">sal com\u00fan<\/a> o cloruro de sodio,<\/li><li>b) los alimentos adicionados de sal, en especial <a href=\"http:\/\/marhuez.com\/es\/content\/la-sal-refinada-lo-que-no-sabes-sobre-ella\" target=\"_blank\" rel=\"noreferrer noopener\">los industrializados<\/a><\/li><li>c) y el sodio con tenido de manera natural en los alimentos.<\/li><\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">Sabiendo esto, te voy a explicar de forma muy gr\u00e1fica c\u00f3mo puedes calcular el contenido de sal en tus alimentos para que la pr\u00f3xima vez que vayas al supermercado y compres comida industrializada, puedas hacer el c\u00e1lculo de sodio que t\u00fa y tu familia consumir\u00e1n.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h2-factor-de-conversion-de-sodio-a-sal\">H2-Factor de conversi\u00f3n de sodio a sal<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">Qu\u00edmicamente hablando, el sodio tiene un peso molecular de 23 y el cloro de 35.5, por lo que el peso molecular de la sal es:<\/p>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"aligncenter size-large is-resized\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/marhuez.com\/imagenes\/factor_sodio_002.fw.jpg\" alt=\"\" width=\"450\" height=\"125\"\/><\/figure><\/div>\n\n\n\n<p class=\"wp-block-paragraph\">Conociendo el peso molecular del cloruro de sodio y del sodio, se puede sacar un factor de conversi\u00f3n de sodio a sal:<\/p>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"aligncenter size-large is-resized\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/marhuez.com\/imagenes\/factor_sodio_003.fw.jpg\" alt=\"\" width=\"450\" height=\"125\"\/><\/figure><\/div>\n\n\n\n<p class=\"wp-block-paragraph\">Este factor de conversi\u00f3n, permite convertir una determinada cantidad de sal, (expresada en miligramos), para conocer su contenido de sodio.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ejemplo 1:<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">\u00bfCu\u00e1ntos miligramos de sodio aporta un gramo de sal<strong>?<\/strong><\/p>\n\n\n\n<ol class=\"wp-block-list\"><li>Para resolver este problema, primero se debe de transformar los gramos de sal a miligramos. Un gramo es igual a 1000 mg. Para convertir un gramo de sal a miligramos, se multiplica este valor X 1,000.<\/li><li>Para conocer la proporci\u00f3n de sodio en 1,000 mg de sal, se divide entre el factor de conversi\u00f3n (2.54):<\/li><\/ol>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"aligncenter size-large is-resized\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/marhuez.com\/imagenes\/factor_sodio_004.fw.jpg\" alt=\"\" width=\"450\" height=\"125\"\/><\/figure><\/div>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ejemplo 2:<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">\u00bfCu\u00e1ntos miligramos de sal corresponden a 750 mg de sodio?<\/p>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"aligncenter size-large is-resized\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/marhuez.com\/imagenes\/factor_sodio_005.fw.jpg\" alt=\"\" width=\"450\" height=\"125\"\/><\/figure><\/div>\n\n\n\n<p class=\"wp-block-paragraph\">Observa la siguiente imagen y ver\u00e1s que es muy sencillo conocer la operaci\u00f3n matem\u00e1tica que se debe realizar. De sal a sodio, se divide entre el factor de conversi\u00f3n. De sodio a sal, se multiplica por el factor.<\/p>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"aligncenter size-large is-resized\"><img decoding=\"async\" src=\"http:\/\/marhuez.com\/imagenes\/factor_sodio_006.fw.jpg\" alt=\"\" width=\"450\"\/><\/figure><\/div>\n\n\n\n<p class=\"wp-block-paragraph\">Tambi\u00e9n se puede conocer la proporci\u00f3n que ocupa el sodio del total de la sal.<\/p>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"aligncenter size-large is-resized\"><img decoding=\"async\" src=\"http:\/\/marhuez.com\/imagenes\/factor_sodio_007.fw.jpg\" alt=\"\" width=\"450\"\/><\/figure><\/div>\n\n\n\n<p class=\"wp-block-paragraph\">Esto significa que el mismo resultado se puede obtener si se considera que el 40% de la sal corresponde al sodio.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"utilidad-de-esta-operacion\">Utilidad de esta operaci\u00f3n.<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">La mayor parte de la sal que consumimos proviene de los productos procesados (enlatados, embolsados, enfrascados, congelados, etc). Para conocer el verdadero valor de sal que tienen esos productos deber\u00e1s:<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">1.- Multiplicar el valor de sodio que indica la etiqueta por el factor 2.54 que vimos en los c\u00e1lculos anteriores.<\/p>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"aligncenter size-large is-resized\"><img decoding=\"async\" src=\"http:\/\/marhuez.com\/imagenes\/sodio_calculado.jpg\" alt=\"\" width=\"450\"\/><\/figure><\/div>\n\n\n\n<p class=\"wp-block-paragraph\">2.- Si tu envase ya te muestra la cantidad de sodio por porci\u00f3n, el resultado de la divisi\u00f3n anterior ser\u00e1 el contenido final de sal por porci\u00f3n.<\/p>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"aligncenter size-large is-resized\"><img decoding=\"async\" src=\"http:\/\/marhuez.com\/imagenes\/sodio_calculado_2.jpg\" alt=\"\" width=\"450\"\/><\/figure><\/div>\n\n\n\n<p class=\"wp-block-paragraph\">3.- Si la etiqueta \u00fanicamente muestra cu\u00e1ntas porciones son por envase, entonces deber\u00e1s dividir el resultado del paso 1 entre la cantidad de porciones que indica el envase.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Recuerda que la sal es vital para el buen funcionamiento de nuestro cuerpo, sin embargo, la cantidad y calidad de la sal en los alimentos procesados est\u00e1 significando un peligro para la salud.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">La Organizaci\u00f3n Mundial de la salud recomienda una ingesta m\u00e1xima de 5.5 gr de sal al d\u00eda. Evita comer comida procesada y alimentos preparados con productos industrializados.<\/p>\n\n\n\n<div style=\"height:20px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Notas:<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">1.- Un cati\u00f3n es un i\u00f3n con carga el\u00e9ctrica positiva, es decir, que ha perdido electrones. Los cationes se describen con un estado de oxidaci\u00f3n positivo. En t\u00e9rminos qu\u00edmicos, es cuando un \u00e1tomo neutro pierde uno o m\u00e1s electrones de su dotaci\u00f3n original, este fen\u00f3meno se conoce como ionizaci\u00f3n.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">2.- El plasma es la fracci\u00f3n l\u00edquida y acelular de la sangre. Se obtiene al dejar a la sangre desprovista de c\u00e9lulas como los gl\u00f3bulos rojos y los gl\u00f3bulos blancos. Est\u00e1 compuesto por un 90 % de agua, un 7 % de prote\u00ednas, y el 3 % restante por grasa, glucosa, vitaminas, hormonas, ox\u00edgeno, di\u00f3xido de carbono y nitr\u00f3geno, adem\u00e1s de productos de desecho del metabolismo como el \u00e1cido \u00farico.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">3.- El l\u00edquido intersticial o l\u00edquido tisular es el l\u00edquido contenido en el espacio entre las c\u00e9lulas (intersticio). El l\u00edquido intersticial es un filtrado del plasma proveniente de los capilares que consiste en un solvente acuoso que contiene amino\u00e1cidos, az\u00facares, \u00e1cidos grasos, coenzimas, hormonas, neurotransmisores, sales minerales y productos de desecho de las c\u00e9lulas.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">4.- Cuando dos soluciones se ponen en contacto a trav\u00e9s de una membrana semipermeable (membrana que deja pasar las mol\u00e9culas del disolvente pero no las de los solutos), las mol\u00e9culas de disolvente se difunden, pasando habitualmente desde la soluci\u00f3n con menor concentraci\u00f3n de solutos a la de mayor concentraci\u00f3n. Este fen\u00f3meno recibe el nombre de \u00f3smosis, palabra que deriva del griego cosmos, que significa \u00abimpulso\u00bb.
